You will need
4 egg whites or 2 eggs*350ml cold water4 tablespoons (80ml) oil**
Method
Preheat oven to 180oC. Line a small loaf tin and line it with baking paper.
Place water, eggs and oil in a medium mixing bowl and whisk to combine.
Add contents of packet and whisk until well combined. Allow to sit for 5 minutes to thicken, then transfer mixture into prepared tin.
Bake for 50 minutes. Remove loaf from tin and paper and bake for another 10 minutes.
Allow to cool on a wire rack before slicing.
* Whole eggs results in a richer, more cake texture, whites only results in a crustier, lighter loaf.
** Most oils work, however please avoid oils that changes flavour when heated, such as nut and seed oils.
We use a heavy 18cm x 9cm bread tin to produce a 830g, 10cm high, crusty loaf that cuts into 16 good slices.

You will need
150g cold salted butter1 tablespoon (20ml) cold water
Method
Empty the contents of packet into a medium sized mixing bowl.
Rub the butter into flour mix until the mixture resembles fine breadcrumbs.
Add the cold water and mix with a fork until the mixture comes together into a ball.
Roll out or press into a 22cm tart tin. Refrigerate or freeze in tin until ready to fill and bake.
* Pastry shells can be baked from frozen.
* To use for sausage rolls, crackers, pizza etc, roll out between 2 sheets of baking paper, place on a cookie tray and refrigerate for 30 minutes before rolling, cutting or topping.

YOU WILL NEED
1 packet Banana Bread mix
250g very ripe mashed banana (approx 2)
1/2 cup oil of choice*
1/2 cup water
Method:
Preheat oven to 170°C and line a loaf tin with baking paper
Mash the banana with a fork.
Add oil and water and stir.
Add Banana Bread mix. Mix well.
Spoon cake batter into tin and bake for 50-60 minutes.
Cool in tin for 15 minutes before turning out.

A moist, dense chocolate cake. It is not overly sweet so can handle a decadent topping like icing or ganache. Just add water and oil to the mix.
YOU WILL NEED:
1 packet Gluten Free Chocolate Cake mix
2/3 cup vegetable oil
1 1/4 cups water
Method:
Preheat oven to 150°C and line an 20-22cm cake tin with baking paper.
Empty the contents of the packet into a bowl.
Add the oil and water and whisk until smooth.
Pour into the cake tin and bake for 45-60 minutes.
Allow to cool before cutting.
Decadent Chocolate Ganache
To make ganache, heat 200g coconut cream in a small saucepan.
When hot, remove from heat and add 200g chopped dark chocolate. Whisk until the chocolate has melted into the coconut cream.
Spread over cold cake OR allow the ganache to cool and then whip it into a mousse.
