CONTAINS ALMONDS & LUPIN
You will need
½ cup (60g) Pancake Mix
80ml 4 tablespoons water
1 egg
Method
Place the water and egg into a bowl and whisk together. Add Pancake Mix and whisk until smooth. Allow to sit for 2-3 minutes to thicken.
Preheat a greased non-stick frypan to medium heat.
Spoon the batter into the pan to make 3 pancakes, each approximately 1cm thick.
Reduce heat to low, cover with a lid and cook for 2-3 minutes. Remove lid, flip over and cook for a further 1-2 minutes without lid.
Serve immediately with your favourite low carb toppings. Or cool and store in refrigerator for 24 hours before reheating to serve.
Waffles (makes 2-3 depending on your waffle iron)
Make the batter as above. Grease and reheat a waffle iron.
Pour in one third of the batter and cook for 4-5 minutes, or until the top is crunchy and golden.
