Vanilla Cake with Poached Quince

It is Quince Season. You’ll see these big yellow knobbly fellows at fruit shops right about now, so it's time to discover the beauty in their cooked rosy colour and apple-grainy texture.
Vanilla Cake with Poached Quince

Make a vanilla cake with our Cupcake Mix, you just need to add water and a bit of oil.
Peel the quince and cut into 8 thick wedges. Place in a medium sized pan with sugar and spices and about 1 cup water. Bring to boil then simmer for about 40 minutes until soft but not mushy and the fruit has turned from white to a deep rosy pink. Arrange the wedges around the vanilla cake and drizzle with extra syrup.
Garnish with chopped pistachios for a nice colour contrast and serve.
