GLUTEN FREE | VEGAN | Serves 8
- 2 -3 large yellow quince
- 1/2 cup sugar
- Cinnamon, cardamom, nutmeg whatever you have.
- Gluten Free Vanilla Cupcake Mix
- 1 1/4 cups water
- 2/3 cups oil
Make a vanilla cake with our Cupcake Mix, you just need to add water and a bit of oil.
Peel the quince and cut into 8 thick wedges. Place in a medium sized pan with sugar and spices and about 1 cup water. Bring to boil then simmer for about 40 minutes until soft but not mushy and the fruit has turned from white to a deep rosy pink. Arrange the wedges around the vanilla cake and drizzle with extra syrup.
Garnish with chopped pistachios for a nice colour contrast and serve.
