Vanilla Cake with Poached Quince

GLUTEN FREE | VEGAN | Serves 8

Make a vanilla cake with our Cupcake Mix, you just need to add water and a bit of oil.
Peel the quince and cut into 8 thick wedges. Place in a medium sized pan with sugar and spices and about 1 cup water. Bring to boil then simmer for about 40 minutes until soft but not mushy and the fruit has turned from white to a deep rosy pink. Arrange the wedges around the vanilla cake and drizzle with extra syrup.
Garnish with chopped pistachios for a nice colour contrast and serve.
*Poached quinces are perfect for cake toppers, added to porridge, ice  cream, basically anything you want to add a little sticky fruity goodness to.
