Kale, Lemon and Olive Frittata

GLUTEN FREE | VEGAN | Serves 4
ingredients
  • olive oil
  • 2 garlic cloves
  • 1 bunch of kale roughly chopped
  • 1tbls lemon zest
  • handful of pitted kalamata olives
  • handful of finely sliced shallots
  • 1 pkt Savoury Egg Mix
  • 1 tablespoon Cheez Sprinkles
  • sea salt
  • freshly ground pepper

 

method

Preheat oven to 160o
Saute garlic in olive oil. Remove. Add kale and cook till until wilted.

Follow instructions of Egg Mix. Pour egg mixture over kale mix and add olives and lemon zest, salt and pepper.
Pour into a lined cake tin, sprinkle Cheez sprinkles on top and bake for about 30 minutes or until the frittata is set.

Let the frittata sit for a few minutes before serving.
