PEPITA CRUST TOMATO TART
- 1 x Savoury Egg Mix
- 2 punnets of tomatoes
- Asparagus spears
- Fresh basil
- 270g pepitas
- 150g GF flour
- 150g Desiccated Coconut
- 160g Vegan Butter
- 1tsp Sugar
- 1tsp salt
- Fresh basil
Combine crust ingredients in a food processor and give it a quick whizz. You still want the ingredients to have a bit of texture.
Line a cake tine with baking paper and then line the base and sides with the crust mixture.
Follow instructions on the Savoury Egg Mix. Add tomatoes, asparagus, and fresh basil.
Pour into crust and bake for approximately 30 minutes at 160 degrees.
ASIAN SESAME PANCAKES
These delicious fritters are super easy to make. Simply follow the Savoury Egg Mix instructions to make an omelette.
Dollop egg mix in a non stick fry pan, sprinkle shredded carrot and spring onion on top and flip when golden.
Serve with sesame seeds, finely sliced fresh chilli (if you like a little spice), and sweet soy dipping sauce - we suggest kekap manis soy sauce and black vinegar
PUMPKIN & SPINACH FRITTATA
A lovely fresh take on a classic frittata. Following the instructions of the Savoury Egg Mix, simply add chopped spinach, a finely sliced onion, roasted pumpkin and fresh parsley to the mix and bake. Roasted pumpkin adds a lovely depth to this classic.
ASIAN MUSHROOM OMELETTE
Saute your favourite mushrooms in olive oil, add a pinch of salt and fresh thyme to taste.
Follow Savoury Egg Mix instructions to make the omelette and voila! Easy, EGG FREE and tasty!
SEASONAL ASPARAGUS TART
We love this tart in Spring. Line a loose-bottom tart tin with shortcrust pastry, add the Savoury Egg Mix ( Quiche version) and lay freshly steamed asparagus, finely sliced zucchini, fresh thyme and a dash of black pepper.
Bake according to instructions on packet.
Serve with fresh lemon wedges and crusty bread.
