Vegan White Chocolate

Creamy, dreamy, dairy free white chocolate to die for. This image is of really decadent fresh dates stuffed with turkish dried apricots and brazil nuts, coated in vegan white chocolate



  • 1/2 cup (80g) raw cashews, soaked overnight
  • 120g shaved cacoa butter
  • 1/3 cup (80g) coconut oil
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1/4 cup (40g) raw sugar


Place the raw sugar into a high speed blender and process until as fine as icing sugar.

Place cacoa butter, coconut oil and salt in a bowl over a pot of simmering water. As soon as they have melted, remove from the heat.

Drain the cashews and place in the blender with the raw icing sugar. Process until fine. Pour in the melted cocoa butter mix and blend until smooth. Use as required.
