Our fave taco accompaniment…it's all about the extra bowls of yum when you do a taco spread!
- 1 sweet, ripe fresh pineapple, peeled and chopped into 1 cm dice
- 1 small red cabbage, finely shredded
- 1 small red onion, finely sliced
- 3 tablespoons apple cider vinegar
- 1 clove garlic, crushed
- 1 tablespoon sugar
- 1 tablespoons salt
- fresh coriander, chopped
Combine everything in a large glass bowl and allow to marinate for at least 10 minutes before serving. To serve: lift the cabbage mixture out of the bowl, squeezing gently to remove excess liquid and arrange in a serving bowl.
Tip >> the lovely pink juice that is left over makes a MEAN margarita addition…don’t throw it away!
